Il Palazzo del Gusto is an instrumental Institution of the Province of Terni for the valorization of the local wine and food chain of production.
Hosted in the former Convent of San Giovanni, in the heart of the medieval Orvieto, it is a center of communication, culture and education, a point of encounter for all those who work in the field of vitiviniculture and typical products, a space in which to collect and promote scientific studies on nutrition and local cultivars. This facility provides a concrete response to the increasingly insistent requests for knowledge and quality on the part of the departments of tourism and agriculture.

The resident CSF- Professional Training Center of the Province of Terni and The University of Flavors of Perugia make it a qualified centre of professional training courses for aspiring cooks and barmen. In the modern didactic kitchen are also organized amateur cooking classes and courses for tourists and local groups of enthusiasts who want to learn Umbrian cookery.

The Regional Enoteca of Umbria completes the cultural and educational offer of Il Palazzo del Gusto. Hosted in the cellars excavated in the tufa of the Convent, it is a unique public facility of this kind, displaying the best quality wines included in the11 DOC e 2 DOCG of Umbria.

At the end of 2007 Il Palazzo del Gusto has become the instrumental Institution of the Province of Terni (Delib. N° 124 del 17/12/2007) and thanks to the previous Agreement Protocol with the City of Orvieto, Comunità Montana and the Region Umbria concerning the Regional Enoteca, this institution at present is a significant service center and developing motor for the economy of Orvieto and the territory of the Province.
In 2008, during the first year of activity, there have been significant structural, management and operative renovations.
